JERUSALEM ARTICHOKE SOUP

A nice warming soup with a delicate nutty flavour.

Jerusalem artichokes

This is really just the basic soup recipe for all vegetable soups. Quantities aren't terribly exact, and if you like this soup you will almost certainly adjust the quantities and the flavourings to your own tastes.

Peel the artichokes (one pound weight is more than enough) and immediately put them into cold water, else they will discolour almost immediately.

Chop a medium sized onion finely into a pan and fry gently with butter or oil until the onion is translucent. Chop the artichokes and add to the mixture. Add garlic and season to taste. Stir in about one pint of vegetable stock (a stock cube is fine) and leave everything to simmer for 20 minutes

Finally, blend in a food processor until smooth -- and enjoy!
